Warm Tarragon Dressed Potato Salad- WHB

My own post this week is a potato salad that I mix together
in the fashion of Nicoise dressing.

I’m not sure if anyone has ever done this before. I just love Nicoise type dressings.

This one is a mixture of a couple I have tried, and I added the wine.

I don’t peel the potatoes but you could if you wished.

I named it-
Warm Tarragon Dressed Potato Salad

3 cups potatoes — cubed
2 each eggs, hard-boiled — chopped
1/2 cup green onion — sliced thin
salt and pepper — to taste
— FOR DRESSING
1/4 cup extra virgin olive oil
1/4 cup cooking wine — white
3 tablespoons cider vinegar
2 teaspoons mustard — good deli type
1 1/2 teaspoons honey
1 tablespoon fresh tarragon — snipped

Cook the cubed potatoes in salted water until tender. Drain.

Add the eggs and green onion, mix well.

For dressing wisk together all ingredients well. Pour over
potato mixture, toss.

Salt and pepper to taste and serve warm.

    I love fresh tarragon. I never liked dried tarragon. But the fresh is very nice. Looks like a great recipe.

    I can tell you’re a great cook just by the way you intuitively combine ingredients. I’m with Sher on the dried tarragon. I MUST remember to plant some fresh tarragon next year.

    I can tell right away after read through your recipe… your potato salad is delicious! Me too, the potato skin doesn’t bother me a bit.

    Mmmm, I like warm potato salads, I’ll have to give this one a try… as an added bonus the leftovers are always good cold too.
