Iced Zucchini Raisin Bars

With Zuchinni growing faster than one can cook we need zuchinni outlets. Here is one I like.

Iced Zucchini Raisin Bars

— cake ingredients
2/3 cup brown sugar, packed
1/4 cup light margarine — softened
1 teaspoon vanilla extract
1/3 cup egg substitute, liquid
1 cup all-purpose flour
1 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1 cup shredded zucchini
1/2 cup raisins, seedless
— frosting ingredients
3/4 cup powdered sugar
1 tablespoon light margarine — softened
1/8 teaspoon ground clove
3 teaspoons skim milk

Heat oven to 350. Grease an 8×8 pan. Mix together all cake ingredients and spread in prepared pan. Bake for 25-30 minutes. Cool and ice.

Icing- MIx all frosting ingredients until smooth and spreadable. Ice cake when cool.
