Summer Breakfast

Had for odd craved breakfast this morning.

Served on a garden fresh bed of lettuce, it was hard to beat. I did sub. a garden fresh hot banana pepper since I didn’t have the chili pepper which caused me to up the salt to taste. Hot banana may have even made it more appealing for purpose at hand, breakfast. Also subbed dried cilantro for the parsley.

Next time I want to try it as stated but the hot banana wasn’t bad at all. Recipe from my The Illustrated Encyclopedia Of American Cooking.

Avocado Egg Salad

6 each eggs, hard-boiled
2 each avocado — cubed
1 each chili pepper — minced
1 each onion — minced
3 tablespoons parsley — chopped
2 tablespoons vinegar
1 1/2 teaspoons salt

Combine all ingredients and mash to desired consistancy. Serve on lettuce bed with ripe tomato.
