Sausage gravy is a staple in every Southern home. There isn’t a breakfast hubby would rather have.

But my own tastes, while I love sausage gravy, often run amok. Here is a recipe for an egg curry I came up with on one such occasion when my odd cravings struck. If you like curry you will love it. Of course use butter and whole milk if you don’t care for the lighter version. I love it either way.

Creamed Eggs Curry

1 tablespoon light margarine
1/4 cup diced celery
1/8 cup diced green bell pepper
3 tablespoons roasted red pepper — diced
4 eggs — hard-boiled — diced
4 tablespoons all-purpose flour
2 1/2 cups skim milk
1 teaspoon curry powder
1 dash salt and pepper — to taste
1 dash cayenne pepper — if desired
8 slices low calorie white bread — toasted

Melt margarine in a frying pan over medium heat and cook celery and peppers until soft.

Add flour and milk and stir until thickened.

Add diced egg and spices and cook until heated through and creamy.

Serve over toast.

    Ah yes!! My grandmother would make brown flour gravy or sawmill gravy to serve on her magnificent bisuits. Nothing better!
